KRIGBAUM TRACKS MUFFINS: 1/2 C. olive oil 3/4 C. applesauce 3 C. sugar 2 eggs 2 tsp. vanilla Mix well then add: 2 C. wheat flour 2 C. unbleached flour 2 tsp. baking powder 1 tsp. baking soda 4 tsp. cinnamon 1/4 t. ground cloves 1/4 t. allspice 1/4 t. nutmeg 1/2 t. salt 1/2 C. Craisins 1 C. raisins 1 C. chopped walnuts Mix well then add: 5 C. grated carrots Mix well and drop into muffin cups. Bake 27 min. @ 375 (maybe less at lower elevations) Cool overnight and enjoy. They also freeze well. Note: they are best eaten AFTER putting in 2 or 3 hours work on a Monday morning with the trails maintenance crew! Come join us!!
